Using a rotisserie chicken and croissants makes this recipe come together so fast, and tastes amazing! This is the perfect lunch for when you need something quick and delicious.
Ingredients needed to make Chicken Salad Sandwiches:
- 2 chicken breasts from a rotisserie chicken shredded
- 1 cup red grapes sliced in half
- 2 stalks celery chopped small
- 1 lemon juiced
- salt and pepper to taste
- 1/2 cup mayo
- 1 container large croissants
How to make Chicken Salad Sandwiches:
- In a large bowl add all ingredients except for the croissants, and toss until all is coated in the lemon juice and mayo.

- Use your hand mixer or stand mixer to shred the chicken. We love using this method to finely shred chicken for a soft texture.
- Kitchen shears make it easy to cut chicken up into chunks in a fast way.
- Use real lemon juice for this recipe, not the fake stuff.
- Use Best Foods Mayo (aka Hellman’s Mayo), it’s the best!
- Buy two rotisserie chickens! If you are taking the meat off one, why not buy two and freeze the shredded chicken to be used later in a different recipe

You really can customize this recipe to your preference. Here’s some variations that we think would be good:
- Dijon mustard: A teaspoon or two if you like a little spice
- Sliced almonds: Try toasting them in a try pan until fragrant if you like toasted almonds
- Green onion: Minced fine
- Fresh dill: Fresh herbs are always a good idea.
- Swap mayo for Greek yogurt if you are trying to cut calories
