Rice A Roni Chicken Casserole with artichoke hearts.
I have been going through my old recipe binder and there are a few gems in there that have yet to make it to the blog, like this: Rice A Roni Chicken Casserole. It’s so good, I crave the leftovers for breakfast the next morning. Sometimes it’s the recipes that sound a little too “country-cousin” (if you know what I mean) that end up being my favorite. Ha!
What you need to make Rice A Roni Chicken Casserole:
- 1 6.9oz box Rice-A-Roni (Chicken Flavor), prepared
- 2 cooked chicken breasts, shredded and chopped
- 1 jar marinated artichoke hearts
- 1 stalk celery, diced
- 1 green onion, finely diced
- 1/2 green bell pepper, diced
- 1/2 cup mayonnaise
- 1 cup grated cheddar cheese blend
How to make Rice A Roni Chicken Casserole:
- Preheat oven to 350 F.
- Cook the rice-a-roni as directed on the box.
- In a large bowl add all the ingredients except for the grated cheese.
- Mix all ingredients together. The mayo helps to combine it all together.
- Move mixture into a 9×9 glass pyrex dish. Top with grated cheese.
- Bake for 30 minutes until the cheese is melted and the casserole is warmed through.
What to serve with Rice-A-Roni Casserole chicken bake:
Because there is celery, green bell pepper and green onion in this recipe, I usually don’t serve it with a side vegetable when I make it for dinner. If you’d like to serve it with a vegetable side dish, here are a few that would go great with it:
–roasted carrots
–roasted Brussels sprouts
–steamed broccoli

- 1/2 cup mayonnaise
- 1 cup grated cheddar cheese blend
