Okay, I have a recipe for you that my family is loving lately: Oven Stew. I love how it’s everything you love about a hearty stew only easier with a few short cuts. It’s not the most pretty of the food pics I share here, just real food you can feel good about serving to your family.
Easy Oven Stew made with ground beef
The shortcut here is to use ground beef. Just like using your slow cooker, think of your oven like a slow cooker for this recipe because it cooks low and slow. It does take 3+ hours to bake at a lower temperature, so you’ll need to think about making dinner earlier in the day just like when you use your crockpot. You could do all the prep the night before and just put it in the oven when ready to start allowing the bake time for it to be ready for dinner. Most of the ingredients are things you probably have on hand. Don’t you love recipes like that?
What you need to make Oven Baked Stew:
- 1 pound ground beef
- 1 medium onion minced
- 2 cups potatoes peeled and cut into chunks
- 2 cups celery cut into chunks
- 2 cups carrots (or 12-15 baby carrots) cut into chunks
- 1 10 ¾ oz can tomato soup
- 1 10 ¾ oz can cream of mushroom soup cream of mushroom soup
- 1 can water
- 1/2 teaspoon pepper
- 1 teaspoon salt
- 1 tablespoon sugar
- 2 tablespoon uncooked rice
How to make Oven Beef Stew:
- Preheat oven to 325 degrees.
- Chop up the vegetables and place into either two glass 8×8 inch baking dishes or one 9×13 baking dish.
- Mix together the soups, water, salt, pepper, sugar, and rice. Mix well.
- Pour soup mixture over vegetables.
- Break up the raw ground beef into chucks and sprinkle it over the top. The ground beef does not need to be browned before baking.
- Season the ground beef with salt and pepper.
- Cover with tin foil and bake at 325 degrees for 3+ hours, stirring occasionally. You may need to add a little water if it’s too thick.
