Chocolate avocado pudding with whipped coconut cream
Alright, have you ever tried chocolate avocado pudding? It’s one of those things I had to try, because it just sounded so weird. I’ve mentioned before that we are doing an elimination diet, and one of the things we are off of is dairy…which is so hard! I’ve been missing things like ice cream and pudding, so when I heard about this chocolate avocado pudding, I wanted to see if it could fill the cold, creamy, smooth void I’ve been missing…and it did!
What you need to make Chocolate Avocado Pudding:
- avocados
- unsweetened cocoa powder
- raw unfiltered honey
How to make Chocolate Avocado Pudding:
- Blend together: In a good blender, blend all three ingredients together until you reach a smooth consistency.
- Chill and serve: Refrigerate for an hour or so until chilled…and enjoy!
What you need to make Whipped Coconut Cream:
- coconut cream
- vanilla extract
- honey
How to make Whipped Cream Coconut Cream:
- Refrigerate the can of Coconut Cream overnight: Place the can of coconut cream in your refrigerator overnight, right side up. In the fridge the cream will rise to the top and separate from the coconut liquid. You can whip it the next day, or you can leave it in your fridge until you are ready to use.
- Flip and pour: When ready to use it, gently flip the can upside down and then open the can like normal. The coconut liquid will be on top and you can easily pour it out into a bowl. You can save this liquid for later to be used in a smoothie. The solid coconut cream will be on the bottom.
- Add to bowl: Scrape the coconut cream out into a chilled mixing bowl.
- Beat until fluffy: Mix it in your mixer with the whisk attachment on medium speed adding the vanilla and honey to taste. Whip it in your mixer until it’s light and fluffy.
How to store Chocolate Avocado Pudding with Whipped Cream Coconut Cream:
Store your pudding and coconut cream separately in the refrigerator. They will last around 3 days!
Non Dairy Pudding:
The great things about this pudding is that it’s non dairy! If you or someone you know is lactose intolerant, this is a great dessert option, and it’s so delicious! Not to mention, the Whipped Coconut Cream to top it with is also dairy free.
Guilt-Free Pudding:
This pudding is filled with healthy things, and it really is guilt-free. The ingredients are simple and it really is crazy how it comes together to the texture of the chocolate pudding you know and love.
Blending Chocolate Avocado Pudding:
The nice thing about this pudding is that you basically just blend all of the ingredients together. It comes together super quick if you want something sweet in a hurry.
Coconut Whipped Cream:
The thing that makes this pudding is the delicious Whipped Coconut Cream that you add on top. Have you ever tried whipped coconut cream? It’s such a great alternative to the real stuff. Try it on other pies and desserts too!
Chocolate Avocado Pudding with Whipped Coconut Cream
We love this decadent dairy free dessert.
Ingredients
For the Chocolate Avocado Pudding:
- 2 ripe avocados pitted and peeled
- 4 tablespoons coco powder unsweetened
- 1/4 cup honey raw unfiltered
For the Whipped Coconut Cream:
- 1 can full fat coconut cream
- 1/2 teaspoon vanilla extract
- 1 tablespoon honey raw and unfiltered
Instructions
For the Chocolate Avocado Pudding:
