Easy Monday Night Meatloaf made with a tangy sweet glaze on top. You can’t go wrong with meatloaf!
Are you good at meal planning? I really wish I was better at it. For some reason I have a mental roadblock when it comes to thinking out that far. I seem to always just run to the store for the basics and grab a few things for a few dinners.
The one thing I do know is what my family likes, and meatloaf always makes the list. We’ve dubbed Mondays – meatloaf Monday around here, to make things easy. It’s not every Monday, but when it works, it does help to take the guess work out of the meal planning.
What you’ll need to make Meatloaf:
- 1 pound ground beef
- 1 cup oats
- 1 egg
- 1/2 cup water
- 1/4 cup onions minced
- 1/2 teaspoon garlic minced
- 1/2 cup ketchup
- 1 teaspoon salt
- 1/4 teaspoon pepper
For the Glaze:
- 1/3 cup ketchup
- 1 tablespoon mustard
- 1/4 cup raw unfiltered honey
How to make homemade Meatloaf:
- Preheat your oven to 350.
- Mix the egg and the water together first. Add in all the other ingredients and mix well.
- Lightly spray your pan with nonstick cooking spray. Add the meatloaf mixture into the loaf pan.
Making the Glaze:
- Mix together the meatloaf topping ingredients. Spread the topping over the meatloaf. Bake for 1 hour.
- Serve it with potatoes, and a steamed vegetable. It’s a great dinner for a Monday Night.
How to store Meatloaf:
Prepared meatloaf will last up to 4 days sealed in a container in the refrigerator.
Why add oats to meatloaf?
The use of oats in this meatloaf helps create the perfect texture, and keeps it from getting too dry. It also makes this recipe gluten-free! You can blend the dried oats before adding to the meat mixture if you prefer to not see them in the meatloaf.
Is Meatloaf gluten free?
It can be! Our version uses oats instead of breadcrumbs to stay away from gluten. For the topping, you can use our homemade ketchup making the entire thing gluten free friendly.
Why do you add water to Meatloaf?
Adding water to meatloaf helps create a juicy and tender meat once cooked. You can also use milk, or chicken stock instead!

Recipe Notes
*Optional shortcut: you can omit the salt and fresh minced onion and instead add one packet of Lipton Onion Soup Mix to the meatloaf mixture before baking.
