Creamy Tomato Basil Soup is the glammed up version of the classic tomato soup we all know and love. It’s pure comfort food on a chilly day.
How to make Creamy Tomato Basil Soup
You can make this recipe with canned tomatoes or fresh tomatoes. I recently had a bunch of garden tomatoes that were getting a little overripe, and this is a great way to use overripe tomatoes, because you roast them! Plus the flavor intensifies when you roast tomatoes. It’s so easy to roast tomatoes:
-Toss fresh tomatoes in a little extra virgin olive oil and roast them at 400F. for 25-30 minutes. Let them cool for a bit, and when they are cool enough to handle, peel and discard all the skins.
-If using canned tomatoes, we love San Marzano tomatoes (they’re the best!), they come in the yellow can.
After you roast the tomatoes, you need to let them cool a bit so you can peel the skins off. Now you are ready to make the soup! Do you have an immersion blender? It’s a great way to make this soup smooth without having to transfer it over to a regular blender.
Can you freeze Creamy Tomato Basil Soup?
If you are plan to make a big batch of this soup specifically for freezing, I would leave out the cream completely. You can still freeze leftover tomato soup with cream, but it just requires careful reheating to keep the cream from curdling.

This recipe for creamy tomato basil soup is so good! You can make a big batch and freeze it if you’d like. It’s perfect for dipping grilled cheese sandwiches any night of the week. More fun ways to garnish this soup is to serve it with cooked orzo pasta, crumbled feta cheese, grated parmesan or ribbons of fresh basil.

For this recipe you need basil pesto, you can totally use store bought, but pesto is super easy to make at home. You can make pesto with pine nuts or almonds. Almonds are easier to find in stores and more affordable.
Creamy Tomato Basil Soup
Pure comfort food classics like tomato soup and grilled cheese get an upgrade with this creamy homemade version.
Ingredients
- 3 14.5oz. cans stewed tomatoes OR 30-40 small to medium fresh tomatoes
- 1 cup basil pesto homemade or store bought
- 1/4 cup butter
- 2 stalks celery sliced fine
- 1 cup onion sliced fine
- 1 teaspoon real sea salt
- 3/4 teaspoon dried oregano
- 3 teaspoons raw honey
- 2 cups heavy cream
Optional Garnish
- 1 cup orzo pasta cooked
- 1/2 cup feta cheese crumbled
- 4 leaves fresh basil sliced into thin ribbons
Instructions

Preheat oven to 400F. On a large baking sheet add all the tomatoes and toss with a little olive oil. Roast the tomatoes at 400F for 25-30 minutes. Take them out of the oven and let cool.

Peel all the tomatoes, and discard the skins.

In a large pot, add butter, onion, celery, and dried oregano. Cook until onions and celery are translucent.

Add peeled tomatoes, basil pesto and honey. Cook in the pot for a few minutes.

With an immersion blender, blend it all until smooth.

Finish by stirring in the heavy cream. Continue cooking on medium low for another 15 minutes or so. Serve with grilled cheese sandwiches or croutons. Enjoy!

*When tomatoes are in season, use fresh tomatoes!
*We love to make homemade basil pesto ahead of time and freeze it to be used in this recipe.
