Magic happens when you grill or sear pineapple. The sugar caramelizes into liquid gold. Top the warm pineapple ring with cool vanilla bean ice cream and it’s a delicious duo, not to mention so pretty too!
I know…everyone is moving right along from Summer and onto Fall, but it’s still warm where I live for another few weeks. This dessert would be perfect for a warm Summer night, so you’ll have to pin it to your Summer board for next year. With good pineapple available year round, this dessert would make any dinner party a hit.
Did you know that the core of the pineapple can be edible? Even though it’s so tough to eat, there are great juices and flavor in the center. Next time you slice up a pineapple, don’t throw out the core…freeze it! When the core freezes, the tough fibers change and you can toss these little rounds into your next green smoothie for a little tropical flavor. You’ll have to try it!
To cut out the center core, grab a small circle cookie cutter…or in this case, a Christmas ornament shaped cookie cutter…whatever works, right?! Also a pairing knife to cut the ring from the outside shell works great too.
Now depending on the weather, you could grill the rings outside, or just sear them in a pan to get that golden brown color. Serve warm with a big cold scoop of vanilla and there you have such a simple yet delicious dessert.
