Three Cheese Candy Corn Quesadillas make a fun after school snack or dinner in the Fall and to get excited for Halloween!
Quesadillas are our go to easy snack for the kids at our house. Add chicken (or eggs for breakfast), and you’ve got more than a snack…you’ve got a meal! With Halloween coming up, I thought it would be fun to make quesadillas that look like candy corn! I know it might look like a lot of cheese, and well I guess it is a lot of cheese…Three cheeses to be exact: Monterey Jack, Mild Cheddar and Medium Cheddar. The truth is that I don’t think it’s THAT much more cheese than you’d usually add to a regular quesadilla, it’s just that this one has all the cheese on the outside with the chicken green chile mixture on the inside.
What you’ll need to make Quesadilla to look like a candy corn candy:
- rotisserie chicken
- can green Chiles
- green salsa
- tortillas
- mild cheddar cheese
- sharp to medium cheddar cheese
- monterey jack cheese
How to make Three Cheese Candy Corn Quesadillas:
- In a big pan combine the cooked shredded chicken, chopped green chiles and green salsa. Warm through and mix together.
- On a cooked tortilla add two big spoonfuls of the chicken mixture to one half of the tortilla and fold one half of the tortilla over.
- Cut the tortilla into three triangles.
- Place all the quesadilla triangles onto a sheet pan.
- Turn your oven broiler on high.
- Top each quesadilla triangle with the three cheeses to look like the colors of a candy corn.
- When each triangle is completely covered in the cheeses, place the pan under the broiler for a few minutes until the cheese is melted and bubbling.
- Remove from the oven and serve warm.
How to store these quesadillas:
To store these quesadillas it is best to store on a plate wrapped with plastic wrap and keep in the fridge. They will last up to 3 days!
What kind of cheeses work best for these Quesadillas:
You really want to make sure that you’re getting those yellow, orange, and white colors when making this recipe. I have found that it works if you use Monterey Jack and Medium Cheddar for the white and orange colors. For the outside cheese it was hard to find one that looked yellow-ish. Orange and white cheeses are easy to come by, but the outside yellow-ish color of the candy corn was hard to match with cheese. The answer: Tillamook Mild Cheddar. It was a little bit lighter in color than the rest. Hopefully you can find one that works!
Rotisserie chicken for Three Cheese Quesadillas:
We have found that these quesadillas are much easier to make when you use shredded rotisserie chicken. If you have different leftover chicken that you are wanting to use for the filling, that will work just as well.
Best way to lay the cheese in Three Cheese Quesadillas:
You really want to make sure that the three different cheeses are visible and striped along the tortilla. I have found that if you just break off pieces of the sliced cheeses and lay them in the order of their colors, they will look great when they melt!

The chicken filling in these quesadillas provides lots of protein and makes a great meal when paired with these sides:
- Dip into creamy Cilantro Lime Dressing or Homemade Blender Salsa
- Cilantro Lime Rice
- Mexican Rice
- Veggies with Dip

The ultimate cheese and chicken quesadilla with three different cheeses melted on the outside to look like a candy corn candy. These are fun to make in the Fall and before Halloween.
Ingredients
