Cool off this Summer with homemade Watermelon Kiwi Popsicles made with a simple syrup, fresh watermelon and kiwi juices.
Making popsicles at home is such a fun way to get the kids involved in the kitchen. These watermelon kiwi popsicles not only taste so good, but they’re adorable too! We reserved some of the tiny kiwi seeds from the pureed kiwi and added the seeds into the red watermelon layer to look like watermelon seeds only way tinier.
What you need to make Watermelon Kiwi Popsicles:
- watermelon
- kiwi
- lemon
- sugar
- canned coconut milk
How to make Watermelon Kiwi Popsicles:
- Blend watermelon: Blend the watermelon chunks, until smooth. Press watermelon juice through a strainer and catch all the juice in a bowl, and discard whatever doesn’t make it through the strainer.
- Bring juice and sugar to a simmer: In a medium sized sauce pan add the watermelon juice with 2 tablespoons of the sugar and the lemon juice. Bring to a light simmer and stir until all the sugar is dissolved.
- Next up: blend the kiwi chunks in the blender until smooth and run the juice through a strainer. Reserve some of the whole kiwi seeds to add to the red watermelon layer. They will look like watermelon seeds in the first layer.
- Simmer then chill: In a small sauce pan simmer the strained kiwi juice with 2 Tbsp granulated sugar, until the sugar is dissolved.. Chill kiwi mixture in the refrigerator until ready to use as the final layer.
- Freeze first layer: Pour the watermelon mixture into the popsicle molds about 2/3 of the way up. Wipe up an spills as needed and freeze this first layer for about 3+ hours. After one hour into freezing, add some of the kiwi seeds into the center and bottom of the semi set watermelon layer.
- Add sticks: Add the popsicle sticks to each one and return the popsicles to the freezer to finish freezing the first layer.
- Prepare coconut mixture: While the first layer is in the freezer, whisk the coconut milk with 1 1/2 Tbsp sugar until the sugar dissolves, chill for 30 minutes before adding this layer.
- Add coconut layer: Take the popsicles out of the freezer and carefully pour a little coconut milk in an even layer over the watermelon layer of each popsicle. Clean up any drips as needed. Return the popsicles back to the freezer, uncovered, and chill for another 45 minutes.
- Add kiwi layer: Take popsicles out of the freezer and carefully pour about 1 Tbsp kiwi mixture over the coconut layer. Return to the freezer and chill until popsicles are solid about 2 more hours.
- Remove and serve: To remove each popsicle from it’s mold: add hot tap water to a wide mouth jar and gently insert the popsicle mold into the hot water for about 30 seconds. Pull the mold out of the water and gently squeeze the mold pulling on the popsicle stick at the same time to release the popsicle from the mold.
How to store Watermelon Kiwi Popsicles:
Keep these popsicles stored in the freezer in their original mold. They will last around three weeks!
Tips and tricks:
- If you’d like those cute little tiny kiwi seeds to be more dispersed through out the red layer of these popsicles, don’t mix them in at the liquid state, add them at about 30 -45 minutes into the freezing time. Also add the popsicle sticks in at this time too. This way the sticks will be more centered in the popsicles.
- Give the red a little mix with a wooden skewer. The red watermelon color seems to rise to the top when freezing. If you give it a little mix 45 minutes into freezing the red color will be more even all over.
