It’s the season for ice cream sandwiches, and here’s a fun make at home version: Blueberry Cheesecake Frozen Yogurt Sandwiches.
We’re swapping frozen yogurt for ice cream. It’s like a no bake cheesecake in a cute little frozen ice cream sandwich package. These would make a fun Summer dessert to feed a crowd. We made a quick video so you can see them in action.
What you need to make Blueberry Cheesecake Frozen Yogurt Sandwiches:
- blueberry pie filling
- cream cheese
- vanilla greek yogurt
- vanilla
- graham crackers
How to make Blueberry Cheesecake Frozen Yogurt Sandwiches:
- Add graham crackers to pan: In a square 8×8 pan lined with parchment paper or foil, place graham cracker squares top side down to fill the bottom of the pan.
- Mix cream cheese and vanilla: Place the cream cheese block and vanilla in a large glass bowl. Blend with a hand mixer until well combined and cream cheese is softened.
- Combine with yogurt: Add the vanilla yogurt and continue to blend with the hand mixer.
- Spread over graham crackers: Spread the yogurt mixture over the top of the bottom graham crackers in the pan.
- Spoon and swirl blueberry: Spoon the blueberry pie filling over the yogurt and gently swirl the blueberries into the yogurt.
- Layer top graham crackers: Place more graham crackers over the top of the yogurt, trying to line the graham squares up with squares on the bottom.
- Cover and freeze: Cover the pan with plastic wrap and move to the freezer.
- Freeze: Freeze for 4 hours or overnight.
- Cut and enjoy: When frozen cut into squares and enjoy!

Keep these frozen yogurt sandwiches stored covered in the freezer. You can keep them in the pan together or wrap them individually. They’ll last about a week!
Best tip for Assembly:
When you go to assemble these sandwiches if you line up the graham crackers right over the graham cracker squares on the bottom, it makes it easy to cut the sandwiches into perfect little squares.
