Make simple homemade baked cinnamon apple chips for a crunchy chewy healthy snack!
We love these baked cinnamon apple chips as a healthy-ish crunchy chewy snack to make at home, especially in the Fall. It’s all things cinnamon apple this time of year…and pumpkin spice (amiright?!). The trick to these baked apple chips is slice them super thin so they can get crunchy. The more thin, the more crunchy. Sometimes they end up chewy, and we like the chewy ones too.
What you need to make Baked Cinnamon Apple Chips:
- apples
- cinnamon
- sugar
How to make Baked Cinnamon Apple Chips:
- Preheat: Preheat oven to the low temp of 200 F.
- Line pans: Line two large baking sheets with parchment paper.
- Prep apples: Wash and dry all the apples.
- Slice apples: Thinly slice the apples with a ceramic mandolin. Place all the apple slices on the covered baking sheet.
- Top with cinnamon sugar: Sprinkle with a mixture of sugar and cinnamon.
- Bake: Bake for 1 hour. Flip the apples over and bake for another 1-1.5 hours.
- Set in oven: Turn the oven off and keep the apples inside as the oven cools down for another 1 hour.
- Making apples crunchy: This long bake time will help the apples get crunchy. Some apples might be chewy and only slightly crunchy after 3 hours in the oven.
- Store: Store apple chips at room temp in an air tight container up to one week.

Mandolin for cutting apples:
This ceramic mandolin is so good at getting uniform thinly sliced everything, especially for these apple chips. Please use it with caution, it is very sharp, but it really does speed up this process and you’ll end up with the perfect slices. If you don’t have a mandolin you can always just cut them extra thin yourself!
Cinnamon and sugar for Apple Chips:
You will sprinkle both sides of all the apples with a cinnamon sugar mixture. You can definitely just sprinkle with ground cinnamon if you are trying to consume less sugar.
Baking Apple Chips:
They will bake in the oven…low and slow. At a low heat (200 F.) and slow – about 3 hours with a flip of the apple slices in the middle of the bake time. Your oven will work like a big dehydrator with this low temp and long bake time. Don’t you think they are so pretty after they have baked? They do shrink is size quite a lot.
