Ritz Cracker Chicken
Do you ever have those days where it seems like the day just got away from you and all of a sudden it’s dinner time? Ritz cracker chicken is great for those days. Chicken recipes are a favorite around here, because chicken is so versatile. You can flavor it so many different ways and end up with a delicious meal every time, like our favorite summer chicken tacos or this creamy mushroom asiago chicken. The ideas can be endless with chicken.
How to defrost chicken:
Do you keep frozen chicken breasts in your freezer? They’re so nice to have on hand. We all have different ways of defrosting chicken but did you know that the best and safest way is to defrost it in the refrigerator overnight. Lets face it, sometimes we are in a rush and we forget to put the chicken in the fridge the night before, so there are some ways you can defrost chicken in a pinch:
You can immerse the chicken in cold water using a plastic zip lock bag, changing the water every 20-30 minutes for about 3 hours. Not the most convenient or quickest way but if you are really in a time crunch you can also use the defrost setting on the microwave for 2-3 minutes.
Now that we have our chicken defrosted we can make crunchy buttery Ritz Cracker Chicken.
Ingredients for Ritz Cracker Chicken:
To make this delicious recipe you will need:
- 4 skinless boneless chicken breast
- 1-2 sleeves of crushed Ritz crackers (we used “Everything Bagel” flavor but you can use any flavor or Ritz Crackers you want or preferably the original Ritz crackers)
- 2 beaten eggs
- 1/3 cup milk
- 1/3 cup butter, cubed
- 1 teaspoon Italian seasoning
- salt and pepper to taste
- 3 cups cheddar cheese (optional)
How to make Ritz cracker chicken:
1. Preheat the oven to 375 degrees.
2. Spray a 9×13 pan (or a sheet pan) with non stick cooking spray, you can also line the pan with foil then spray with cooking spray for easy clean up.
3. Set up 2-3 shallow dishes. One for the crushed Ritz crackers and Italian seasoning mixture. One for the beaten eggs, milk, salt and pepper mixture, and the last dish for the optional cheddar cheese.
4. Pound the chicken breast flat for even baking, or you can also try cutting them into strips. Dip each strip into the egg mixture, then cheese (if you are using cheese) and finally the Ritz cracker crumbs.
5. Place each chicken breast onto the lined baking sheet.
6. Arrange the cubes of butter around the chicken.
7. Bake for 25-30 minutes or until the chicken reaches 165 degrees internally (if you are using a thermometer).

Recipe Notes
We used "Everything Bagel" flavored Ritz crackers. You can use any flavor you like but the original Ritz crackers are preferred.
For easy clean up you can line the 9x13 pan with foil and spray with the non stick cooking spray.
