Chicken crescent bundles are the perfect, simple semi-homemade comfort food for a nice dinner at home. The little ones can even help!
I love these chicken crescent bundles. Some call them chicken rollups, my aunt calls them chicken squares…you might even know them by another name. They are so simple to make but seem like a special dinner for some reason. They are seriously delicious and an easy recipe for the little ones in your house to help with.
What makes Chicken Crescent Bundles semi-homemade?
Of course you could always make your pastry from scratch and cook the chicken yourself, but really, who has time for that. We love to use a rotisserie chicken (one chicken is just about the perfect amount). Canned chicken is always an option too if you forgot to pick up a chicken. If using canned chicken, use three 12oz cans. I also suggest using the Pillsbury brand of canned crescent rolls. Other brands will technically work, but I’ve found the bundles just turn out better with Pillsbury.
Can you make Chicken Crescent Bundles ahead of time and freeze them?
You bet you can. I’ve done this two ways before. You can make and assemble the entire bundle and let it freeze on a sheet pan until solid. I always transfer them to a freezer zip bag once fully frozen so they don’t take up as much room. Sometimes I will double or triple the chicken mixture and freeze the extra in freezer zips so it’s all ready to throw together next time. In either case let them thaw overnight in the fridge and bake as normal. It will last up to 2 months in the freezer.
What gravy is best with Chicken Crescent Bundles?
Any simple chicken gravy would work. You could use some Cream of Chicken soup or our favorite: Better than Bouillon gravy (use the chicken flavor).
What are some simple variations for Chicken Crescent Bundles?
Sometimes we add veggies to the inside of the bundles. Broccoli florets or spinach are both delicious. Diced and cooked onion, celery and carrots are great additions too. Just make sure that all veggies you add are pre-cooked and chopped. Or just serve the veggies steamed on the side.
-brush them with melted butter and dip or sprinkle crushed stove top stuffing on the outside before baking.
What do you need to make Chicken Crescent Bundles?
- 2 8 oz. cans Crescent roll dough *Pillsbury
- 3-4 cups cooked chicken *we love cooked rotisserie chicken
- 8oz block cream cheese
- 1/2 packet dry Italian dressing mix
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- optional gravy
How do you make Chicken Crescent Bundles?
1. Preheat oven to 375.
2. In the bowl of a stand mixer (or with a hand mixer) set with the whisk attachment add the chicken and turn the mixer on to the slow to medium speed to shred the chicken. Shred the chicken to a fine shred.
3. Add the cream cheese, salt and pepper and the Italian dressing mix to the chicken in the bowl. If you’d like: change the whisk attachment to the paddle attachment on your stand mixer for easier clean up. Turn it to low to medium speed and mix the softened cream cheese with the chicken and seasoning until it is well combined.
4. Line a sheet pan with parchment paper. Open the tubes of crescent roll dough. Keeping two triangles of dough together to form a rectangle of dough, lay the rectangles of dough (4 at a time) on the sheet pan.
5. Place about 1/2 cup measurement of the chicken mixture onto the center of the dough. Fold the edges of the dough up and over to form a little pouch or bundle. *Optional you can use a fork to press the edges together to seal the chicken mixture in.
6. Bake in the oven for 9-12 minutes.
7. Serve warm and top with gravy if desired.
