Chilaquiles Rojos a delicious Mexican breakfast favorite.
If you have been following here for any length of time then you know we are big fans of Mexican food. We have quite a few recipes we love, like our Mexican Seven Layer Dip and our Easy Mexican Rice; but we needed a Mexican breakfast…so here we are with a delicious and slightly spicy Chilaquilas Rojos.
What Are Chilaquiles?
Aside from being delicious, chilaquiles is a Mexican breakfast dish that consists of crispy tortilla chips that are covered in a red or green sauce. It’s also topped with crumbled cheese and or Mexican cream like sour cream. In this recipe we are using a red sauce hence the name Chilaquiles Rojos (red), if it were a green sauce it would be called Chilaquiles Verde (green).
Our recipe calls for jalapeños but the spice ultimately depends on how you like it, if you like more heat you can add more…if you like less spice you can add less.
Ingredients For Chilaquiles Rojos:
- 10 corn tortilla chips , store bought
- 1 28 ounce can whole tomatoes, drained
- 1 jalapeno, seeded
- 1/2 of a medium white onion, roughly chopped
- 2 cloves of garlic, peeled
- 1 tablespoon vegetable oil
- 1/2 teaspoon salt
- 1/4 teaspoon cumin
- 1 cup low-sodium chicken broth
If the tortilla chips you are using are already salted, you don’t need to add the 1/2 teaspoon of salt that this recipe calls for.
How To Make Chilaquiles Rojos:
- Preheat oven to 350 degrees.
- Place tortilla chips in a 13×9 baking dish in a single layer, spray lightly with oil and bake for 15 minutes.
- Combine all other ingredients (except chicken broth, tortilla chips and salt if chips are already salted) in a blender or food processor until smooth.
- Place the blended sauce in a skillet and cook on medium high heat for 5 minutes, stirring frequently.
- Reduce heat to low and add the chicken broth.
- Place tortilla chips in the sauce and simmer for 5 mins or until chips have softened
- Serve on its own or with toppings of choice and Enjoy!
Homemade Tortillas or Store Bought Tortillas:
Most chilaquiles recipes call for tortilla chips that have been homemade but sometimes there’s just no time for all the oil and frying. If you have the time then homemade tortilla chips are a great way to go but we love the ease of store bought tortilla chips. Again keep in mind that since the tortilla chips are already salted, you will not need to add any additional salt.
How To Serve Chilaquiles Rojos?
You may be wondering how does one serve chilaquiles rojos? You can eat them by themselves since this is a breakfast recipe or you can also serve them with refried beans and sometimes with sliced avocado.
To Egg Or Not To Egg:
Typically chilaquiles rojos does not come served with eggs. If you want eggs on your chilaquiles you have to request them when you are in a traditional Mexican restaurant. Some restaurants automatically serve it with eggs. When you make this recipe at home and you feel like adding a little protein to this already delicious breakfast, you can absolutely add a fried egg, scrambled egg or even a poached egg.

Ingredients

- 1 jalapeno seeded
- 1/2 medium white onion roughly chopped
- 2 gloves garlic peeled
- 1/4 tsp cumin
- 1 tbsp vegetable oil
- 1 cup low sodium chicken broth
- 1/2 tsp salt optional
Instructions

Salt can be omitted due to tortilla chips already having salt on them.
