Lucky Charms Rice Krispie Treats
The older my kids get, the less I do to make holidays magical, it’s sad but true. Although I still love to make a festive sweet treat for every holiday and nothing says Happy St. Patrick’s Day like a box of Lucky Charms. So we are taking those cute, colorful and crunchy marshmallows and making a sweet treat that is truly magically delicious!
What is it about those crunchy little marshmallows? They’re so good! Have you seen that they are now selling just the marshmallows?! So now you can skip the cereal all together if you only want the marshmallows, pretty cool! We made some cute shamrock shaped rice krispie treats a few years ago, but these Lucky Charm Rice Krispie Treats are so fun and colorful for St. Paddy’s Day!
Ingredients:
- 1/2 stick of butter 1/4 cup of butter
- 1/2 box Rice Krispies cereal
- 1 1/2 bag mini marshmallows
- 1 box Lucky Charms, marshmallows only
How to make Lucky Charms Rice Krispie Treats:
- Before starting, if you want to make a rainbow design with the Lucky Charm marshmallows, it’s helpful to line the marshmallows up in rows of the same color before you start making the treats so it’s easy to add them at the end while the treats are still warm.
- Butter the dish.
- Melt the 1/2 stick of butter in a big pot on your stovetop.
- Add in the mini marshmallows and continue stirring as they start to melt.
- The consistency of the marshmallows should still be lumpy when the cereal goes into the pot.
- Dump in the cereal (don’t measure), continue stirring until well mixed together.
- Transfer the treats to your buttered dish.
- Butter your (clean) fingers to pat the warm treats down into the pan. Or use a piece of parchment between the treats and your hands to gently press the treats into the pan.
- While the treats are still warm, line up the rainbow colored crunchy marshmallows in rows on the tops of your treats. Place a piece of parchment paper over the top and gently press down on the marshmallows to help them stick into the top of the treats.
- Butter your knife to cut the treats into squares or rectangles.
- Cut the treats while they’re still warm.
- Wrap them in plastic wrap to keep them fresh or enjoy right away.
Does Lucky Charms sell just the marshmallows?
Yes! Lucky Charms does sell just the marshmallows! I have seen them at Walmart occasionally and you can buy just the marshmallows on Amazon too.
Tips for really good Rice Krispie Treats:
If it’s been a while since you’ve made Rice Krispie Treats, you’d be surprised that this is one of those recipes that’s easy to mess up. If you need a refresher on how to get these gooey treats right every time, here’s all our best tips and tricks:
Tips for the Best Rice Krispie Treats Every Time
In addition to those tips, here are a few more:
–Keep the Stovetop Temp to Medium-high. If the temp of your pot is too hot, your treats will turn out too hard and crunchy rather than soft and gooey after they have cooled.
–Use a fresh bag of mini marshmallows. The fresher the marshmallows the better for making Rice Krispie Treats.
–Enjoy these treats within two days after making them. It’s hard to keep Rice Krispie treats fresh for long even when you wrap them in plastic wrap. It’s best to enjoy them within the first two days after making them.
