What you’ll need to make Banana Cupcakes:
- very ripe bananas (mashed)
- white cake mix
- eggs
- baking soda
- water
- vinegar
- walnuts (optional)
For the Cream Cheese Frosting:
- cream cheese
- milk
- powdered sugar
- butter
- vanilla extract
How to make Banana Cupcakes:
- Warm up your oven: Preheat your oven to 350 degrees.
- Mix ingredients: Mix together water, vinegar and baking soda. Combine with cake mix and eggs. Stir until well combined, and scrape the bowl with spatula.
- Add bananas: Add the mashed bananas. Mix all with an electric mixer for 3 minutes at medium speed.
- Spoon into cupcake liners: Pour into lined cupcake pan. Bake at 350 degrees for 35 minutes or until a toothpick comes out clean.
- Frost: When cooled, frost with the Cream Cheese Frosting.
- Bake: Bake at 350 degrees for 35 minutes or until a toothpick comes out clean.
Making the Cream Cheese Frosting:
- Combine ingredients: Mix together the powdered sugar, butter and cream cheese. Add in milk as needed to get the desired consistency for frosting. Mix in the vanilla.
Make ahead:
These are a great make ahead dessert, and are even better the next day after sitting! Just bake them ahead of time and store until you are ready to eat. You can store the cream cheese frosting in a covered container in the fridge and the baked cupcakes can be in an airtight container on your kitchen counter (stored at room temp). Frost when ready to serve.
