Beef Bean and Cheese Burritos for dinner or for an easy after school snack.
With back to school season here, I love to pre-make dinner or make easy after school snacks that are simple and delicious. I love to make a big batch of these beef bean and cheese burritos and have them in the fridge ready for a quick snack when the kids get home from school. If we serve them for dinner, it’s always nice to have a few toppings to serve with them. Sometimes its the simple recipes that are always my go to.
Homemade Burritos:
Mexican food is always a good idea. The best browned ground beef for tacos and burritos doesn’t have to be complicated. We’ve found the secret to the best beef for tacos and burritos and this is all you need:
- 1 pound ground beef
- 1 small diced onion (either white or yellow onion)
- 1+ tablespoon of cumin (we like lots of cumin)
- 1/2 teaspoon salt

Ingredients:
- 1 pound lean ground beef
- 1 small yellow or white onion, diced
- 1 tablespoon cumin
- Velveeta Cheese (the 5 Fresh Packs)
- 1 10oz. can mild RoTel, drained and blended with an immersion blender
- 1 16oz. can refried beans
- 6 burrito size flour tortillas
How to make Beef Bean and Cheese Burritos:
FOR THE INSIDE FILLING:
- In a large skillet add a little olive oil and cook the diced onions until translucent. Add in the ground beef and brown the ground beef until it is cooked through. Sprinkle with cumin, salt and pepper and stir to combine. Remove excess grease from the ground beef by slightly tipping the hot pan with the beef and onions, and move the ground beef over allowing the grease to pool in one side. Press a paper towel into the corner of the pan to absorb unwanted excess grease.
- Now add the can of refried beans into the ground beef mixture and mix it all together.
- In a separate pan set to medium high heat add three of the five packages of Velveeta.
- Add in the drained and blended can of Mild RoTel and stir the Rotel together with the Velveeta. Stir them together as the cheese melts and the two combine. Turn off the heat when the Velveeta is melted.
WRAP IT UP BURRITO STYLE:
- Cook or just warm up each flour tortilla according to the package directions. Keep warm in a towel or tortilla warmer until ready to use. Tip: warm tortillas roll into a burrito easier than cold tortillas.
- To make each burrito, add 1 -2 tablespoons of the queso cheese mixture and 1/3 cup of the meat and bean mixture into the center of a tortilla. Fold in the edges of the tortilla toward the center, then roll up, tucking in all of the filling…burrito style!
TOPPINGS TO SERVE WITH BURRITOS:
- shredded lettuce
- chopped tomatoes
- guacamole
- sour cream
- pico de gallo
- salsa (try our easy blender salsa recipe!)
- mild sauce (we love the bottle of Taco Bell mild sauce)
FREEZE & REHEAT:
Just like our breakfast burritos, these burritos are great to keep in the freezer and warm them up individually when you want one. These burritos also keep in the fridge for a few days and warm up easily for a minute or so in the microwave.
To freeze them, just add them to a freezer safe ziplock bag. They will keep in the freezer for 3-4 months. To reheat a frozen burrito, place on a plate and and cover with a paper towel. Use the defrost option if frozen and then heat for 1-2 minutes or until warmed.

Ingredients
- 1 pound ground beef

- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 20oz. package Velveeta Cheese (5 Fresh Packs) cut into chunks
- 1 10oz. can mild RoTel drained
- 1 16oz. can refried beans
- 6 burrito size flour tortillas
Instructions

In a large skillet add a little olive oil and cook the diced onions until translucent. Add in the ground beef and brown the ground beef until it is cooked through. Sprinkle with cumin, salt and pepper and stir to combine. Drain excess grease out of the pan, move the meat over in the pan and press a paper towel into the grease to absorb it. Throw the paper towel away.

Add the can of refried beans into the ground beef mixture and mix it all together.

In a separate pan set to medium high heat add three of the five packs of Velveeta. Drain and blend the can of Mild RoTel (we use an immersion blender to easily blend the can of Rotel. Add the blended Rotel to the Velveeta. When the Velveeta starts to melt, stir the two together to combine. Turn off the heat when the Velveeta is melted, and continue to stir the two together until combined.

Place a warm tortilla onto a plate. Working one flour tortilla at a time add a tablespoon of the queso cheese mixture and then a few tablespoons of the bean and meat mixture. Fold in the edges and roll the tortilla up burrito style. Repeat this assembly step until you run out of tortillas or the bean and meat mixture.

Serve warm with your toppings of choice: sour cream, guacamole, lettuce, tomatoes, salsa or hot sauce.
Recipe Notes
*We love the uncooked flour tortillas that you cook on the skillet at home, but use your favorite brand of tortillas.
*Often times I will blend the Rotel before adding it to the Velveeta cheese. I prefer the texture of it blended, but you can add it however you prefer.
*Extra queso cheese can be served with chips or frozen in smaller portions to be warmed up and enjoyed later.
