Light and fluffy Blackberry Fool: Perfect for a late summer dessert.
Blackberry Fool Dessert is the best way to enjoy your summer berries. Combining the juicy, sweet and tart berries with a light and creamy mixture makes for the perfect dessert. This recipe is quick, simple, and will be LOVED by everyone! Switch out the blackberries for your favorite berry, or a berry that is in season!
What you will need to make Blackberry Fool:
- 1 teaspoon vanilla extract
- 2 6oz. packages Blackberries
- 1 cup sugar, divided
- 1 lemon, zested and juiced
- 1 1/2 cup heavy cream
- 1 cup vanilla Greek Yogurt
- fresh mint leaves
How to make Blackberry Fool:
- Zest and juice the lemon, make sure to strain out all the lemon seeds.
- In a medium sized saucepan add one package of blackberries, lemon juice and lemon zest and 1/2 cup sugar. Bring to a boil over medium heat.
- Simmer this mixture for 3-4 minutes until the berries release their juice and the berries are soft, but still holding their shape. Let this mixture cool.
- In a stand mixer or with a hand mixer whip the heavy cream with 1/2 cup sugar until doubled in volume and peaks form. Add in the vanilla.
- Fold in the vanilla Greek Yogurt to the whipped cream until well combined.
- In dessert glasses, layer the whipped cream mixture with the berry syrup mixture alternating two times until you’ve filled your glasses. Top with one-two fresh blackberries and some of the syrup sauce. Garnish each dessert with a sprig of fresh mint. Serve chilled.
How to store a Blackberry Fool dessert:
To store this dessert keep the simmered down fruit, and the whipped cream mixture separate. Both mixtures can stay in the refrigerator for up to one week. When you are ready to indulge again, take them out and layer in your dessert glass. If you’d like to make it ahead, you can assemble a few hours before serving and keep refrigerated.
How to preserve blackberries:
You can always freeze your berries and pull them out when needed. If you are planning on using them quickly after picking fresh or buying, they should be refrigerated and used within one week.
What is the difference between fool and mousse?
A mousse is typically made with whipped cream, gelatin, and a preferred flavor whereas fool is usually made with fruit.
