Buffalo Cauliflower Bites are spicy and tangy with a crisp coating. We start with soaking the cauliflower pieces in an egg milk mixture then coating them with Panko breadcrumbs and parmesan so they bake up extra crispy. Just like our Buffalo Chicken Bites we prefer baking as an easy and more healthy way to cook these delicious bites. When you make this appetizer, no one will miss the chicken.
Ingredients:
- 1 large head of cauliflower cut into florets
- ½ cup milk
- 2 eggs
- ½ cup Panko bread crumbs
- ½ cup parmesan cheese grated
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup buffalo hot sauce
- 2 tablespoons butter melted
- ½ tablespoon lemon juice
- Ranch or Blue Cheese Dressing (for serving)
How to make Buffalo Cauliflower Bites:
- Preheat oven to 425°F.
- Line a sheet pan with parchment paper.
- In a medium sized bowl, whisk together the eggs and milk. In a separate bowl combine, panko bread crumbs, grated parmesan cheese, garlic powder, paprika, salt and pepper until combined.
- Working a few cauliflower pieces at a time, add the cauliflower to the milk and egg mixture then to the dry ingredients to coat all pieces in the mixture.
- Spread coated cauliflower florets out onto the prepared sheet pan in a single layer with space between them. Bake in the oven until lightly browned, about 20 to 25 minutes, flipping each piece halfway through.
- In another small bowl, combine the Buffalo hot sauce, melted butter and lemon juice until well blended.
- Brush the buffalo sauce mixture onto all the cauliflower florets.
- Return to the oven and bake until they start to brown, about 15 minutes.
- Serve hot with ranch dressing or blue cheese dressing for dipping.
Buffalo Cauliflower Bites in the air fryer:
After coating cauliflower pieces in egg mixture and breadcrumbs follow these directions:

- Lightly grease your air fryer basket with cooking spray.
- Arrange cauliflower pieces in a single layer (work in batches if you have a smaller air fryer).
- Cook at 380 degrees for 12 minutes, until cauliflower is fork tender and browned.
- Serve with ranch dressing or blue cheese dressing for dipping.
Make it vegan:
- Omit the parmesan cheese and use corn meal.
- Replace the butter with coconut oil.
- Instead of egg and milk in coating, use your favorite hot sauce and coconut milk.
