Savory, soft, buttery and flaky cheddar bacon biscuits.
There’s something so satisfying about making things completely from scratch. Like biscuits…soft, flaky…steam escaping as you lift off the top to spread butter on it…it’s the best! So delicious.
Biscuits are always a nice addition to most meals. They’re just so buttery and flaky! We are taking them up a notch by adding cheddar cheese and bacon. These cheddar bacon biscuits are just so savory, buttery and flaky they are the perfect addition for breakfast but they will also go great with dinner and brunch too.
What you need to make cheddar bacon biscuits:
- 6 slices of diced bacon
- 4 cups all purpose flour
- 1 cup grated sharp cheddar cheese
- 1/4 cup chopped fresh parsley leaves
- 4 teaspoons baking powder
- 1/2 teaspoon black pepper
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon basking soda
- 1 teaspoon garlic powder
- 3/4 cup frozen unsalted butter
- 1 3/4 cup buttermilk
What if I can not find buttermilk:
If you have a hard time finding buttermilk in any of your local stores or supermarkets, you can make your own buttermilk substitute at home. It’s actually fairly simple to do. All you need is milk and either 1 tablespoon of lemon juice or white distilled vinegar. In a measuring cup add the tablespoon of lemon juice (or white distilled vinegar) then add the amount of milk needed. For this recipe you will fill the rest of the measuring cup to reach the 1 3/4 cup mark. Mix the milk and lemon juice or vinegar together and let it sit for about 5 minutes. Also…did you know that sour cream and whole milk mixed together also works as a buttermilk substitute? It works! For every 1 cup of buttermilk, mix 1/2 cup sour cream and 1/2 cup milk together.
Do I have to use regular milk for the buttermilk substitute:
You do not need to use regular milk to make this buttermilk substitute. It can be made using dairy free options of milks as well. You will use the same measurement of lemon juice or vinegar as above. If you’re looking to make these biscuits completely dairy free, you can use a dairy free butter like: Earth Balance
How to make cheddar bacon biscuits:
- Preheat oven to 450 degrees F. Line a baking sheet with parchment paper.
- Heat a large skillet over medium high heat. Add bacon and cook until crisp, about 6-8 minutes. Move the cooked bacon to a paper towel-lined plate. (We love to use precooked bacon as a short cut in this recipe…about 1/2 cup cooked crumbled bacon.)
- In a large bowl, combine flour, baking powder, pepper, salt, baking soda, garlic powder, cheddar cheese and cooked bacon.
- Grate the frozen butter using the large holes on a box grater. Stir the butter into the flour mixture.
- Add buttermilk and stir with a rubber spatula until a soft dough forms.
- Working on a lightly floured surface, knead the dough 3-4 times until it comes together. With a rolling pin, roll the dough into a 1 1/4-inch thick rectangle. With a 2 inch biscuit or cookie cutter cut out 14-16 round biscuits. Place biscuits onto the baking sheet; place in the freezer for 10-15 minutes.
- Remove biscuits from freezer and bake for 14-17 minutes, or until golden brown.
- Serve warm.
Biscuit variations:
Making biscuits can be intimidating to some people especially if you’ve never made them from scratch before. If you want to make these delicious cheddar bacon biscuits but are intimidated, try making a drop biscuit. You make the dough as normal and instead of rolling the dough out and cutting out the biscuit shapes you just use a spoon and drop about 2-3 tablespoons of dough on a greased baking sheet and follow the original baking directions…super easy!
