A fun spin on classic Chicken Parmesan…make Chicken Parm Meatballs!
I love to take a recipe we know and love and put a fun spin on it. Take a tried and true like chicken parm…and jazz it up meatball style! We’re big fans of meatballs around here, from Swedish meatballs to porcupine meatballs we’re trying to cover all the bases. These chicken parmesan meatballs are so good! Serve them over spaghetti or just with loads of your favorite spaghetti sauce and it’s a dinner my whole family loved, and I think yours will too.
What you’ll need to make Chicken Parmesan Meatballs:
- 2 pounds ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup onions diced fine
- 1 tablespoon parsley chopped
- 1/2 cup parmesan cheese
- 1 egg whisked
- a little lemon zest
- 1 clove garlic minced
- salt and pepper to taste
- 3 tablespoons olive oil
- 1 14 ounce can pizza sauce
- 1 package mozzarella grated
How to make Chicken Parmesan Meatballs:
- Preheat your oven to 400.
- In a large bowl, gently mix together (with your hands) the first 10 ingredients.
- With an ice cream scoop, scoop out uniform meatballs and place on a sheet pan lined with tin foil.
- In a small glass bowl, mix together a spoonful of the pizza sauce with the olive oil. Brush this mixture onto each meatball.
- Bake for 15 minutes.
- Alternate cooking method would be to brown the meatballs in a large frying pan on medium high heat on your stove top, rotating all meatballs to brown on all sides and then bake for 8 – 10 minutes until completely cooked through.
- Remove meatballs from the oven, spoon more sauce over each meatball, and cover each one with a sprinkle of mozzarella cheese. Broil for 2 – 3 minutes just until the cheese melts and bubbles. Serve warm.
How to store Chicken Parmesan Meatballs:
Chicken Parmesan Meatballs should be stored in an airtight container in the fridge. They will stay good for 3-5 days!
Chicken vs Beef Meatballs:
The reason you use chicken in these meatballs is because they are a fun version of classic chicken parmesan that you know and love. Using chicken instead of beef also makes for a more lean and healthy meal!
How to make Chicken Parmesan Meatballs crisp:
For these meatballs we like to brush each one with a mixture of olive oil and your favorite spaghetti sauce before baking. If you really want to make them crispy on the outside, you can roll the meatballs in Panko Breadcrumbs to give it a nice crisp crunch on the outside. This helps them get that delicious nice crispy outside that you want in chicken parmesan!
