Warm Creamy Ranch Crockpot Chicken… the perfect weeknight meal.
There are two times of year that I LOVE my crockpot. In the fall when there’s a chill in the air and you crave a warm hearty soup, and in the Summer when it’s too hot to turn on your oven because you’re worried you’ll heat up your house. But the truth is that I love my crockpot year round. In fact we shared an awesome go to list of really think outside the box recipes all using your crockpot. You’ll have to check it out (crockpot recipe list here). Sometimes you want a recipe you know your whole family will be happy with, and this creamy ranch crockpot chicken is just that. Plus you probably have all these ingredients in your kitchen right now!
What you’ll need to make Creamy Ranch Crockpot Chicken:
- 4 boneless skinless chicken breasts sliced into thick strips
- 4 large russet potatoes cut into bite size pieces with the skin on
- 2 cups carrots peeled and cut into bite size pieces. (don’t use baby carrots)
- 2 cans cream of chicken soup
- 1 packed ranch dressing mix. (or make your own here)
- 1 1/2 cups milk
- 1 small bunch parsley chopped fine
How to make Creamy Ranch Crockpot Chicken:
- Prepare the chicken breasts, carrots and potatoes. Layer the chicken breast strips on bottom into your crockpot followed by the carrots and potato chunks.
- Mix together the two cans of cream of chicken soup, dry ranch dressing mix and milk until well combined. Pour mixture over the carrots, potatoes and chicken in the crockpot. Cook in your crockpot on high heat for 5 to 6 hours or overnight on low heat.
- Mix in the chopped parsley right before serving. Serve over rice.
How to store Creamy Ranch Crockpot Chicken:
Store your chicken mixture and rice separately in the fridge for up to 5 days. This meal makes delicious leftovers!
Tips and Tricks for making this recipe:
- Working with frozen chicken: Thaw it in the fridge a day ahead so it’s ready to cut into strips.
- Prep: Prepare all ingredients the night before so you can easily add to your crock pot in the morning.
- Rinsing your rice: Before cooking your rice in a rice cooker, it’s always a good idea to rinse it a few times before cooking.
- Carrots: Use large full carrots, not the baby style carrots…the flavor on the big carrots you need to peel is so much better!
- Wash your potatoes: Wash the outside skin of the potatoes before cutting into chunks.

How long can you leave Creamy Ranch Crockpot Chicken cooking?
We suggest leaving the crockpot running on low for 5 to 6 hours, but you can always go longer than that if it is more convenient!
Can you use frozen chicken in the crockpot?
You totally can! You’ll just want to start cooking it all in the crock pot earlier in the day. We prefer to use thawed chicken cut into strips, but to save time you could use a frozen chicken breast and shred it once cooked.
