Delicious Crock Pot Cafe Rio Chicken just like the real deal!
Oh how we love you, Cafe Rio. Sometimes it’s fun to make Cafe Rio at home, and this copycat Cafe Rio shredded chicken is so dang close to the real thing! Plus it’s made in your crock pot and comes out so tender and juicy. Any chance we can use our crock pot is a plus, especially when it’s hot outside.
What you’ll need to make Crock Pot Cafe Rio Chicken:
- Boneless and skinless chicken breasts
- Zesty Vinaigrette Dressing
- Lime juice
- Cumin
- Chili powder
- Minced garlic
How to make Crock Pot Cafe Rio Chicken:
- Put the uncooked chicken breasts in the crock pot. Pour the full bottle of salad dressing and your lime juice over the chicken. Sprinkle the rest of the ingredients over the top and mix them in a bit with a spoon.
- Cover your crock pot with the lid and cook on high for 4 hours.
- Remove all the chicken breasts from the crock pot and let cool.
- Shred the chicken breasts and move to a glass bowl.
- Pour most of the liquid over the shredded chicken.
- Serve the chicken warm in a burrito, a burrito bowl, a salad or in an enchilada.

Store your cooked and shredded chicken in the fridge for 3-5 days. This Cafe Rio Chicken makes the best and easiest leftovers! If you have a lot leftover, you can freeze half of it to be used later, and keep half of it in the fridge to be used for the next few days.

Secret to Crock Pot Cafe Rio Chicken:
Here’s the secret ingredient to get the most tender chicken: Zesty Vinaigrette Dressing. It gives it such great flavor! We used to use the Kraft Zesty Lime Vinaigrette until they stopped selling it. I found that using the Kraft Brand Zesty Vinaigrette with the juice of one lime tastes just as good! You’re going to love the flavor that this dressing brings to the chicken.
Best way to shred cooked chicken:
The chicken will come out so tender after hours in your slow cooker! Pull it out to cool and once cooled, you can shred it easily with two forks. Move all the shredded chicken back into your slow cooker to keep the shredded chicken moist and warm for serving. We love to serve directly from the slow cooker for feeding a crowd.

Ingredients
- 4-6 chicken breasts boneless + skinless
