Crunchy Ramen Cabbage Salad is a must this time of year!
One of our summer go-to salad recipes is this classic crunchy ramen cabbage salad. It’s pairs perfectly with grilled main dishes like burgers or grilled chicken or steak. It’s perfect for feeding a crowd and it’s a must in the summer. Isn’t it funny how certain recipes just feel like summer…this is one of those recipes for me. It’s so good!
Ingredients for Ramen Cabbage Salad:
- 16 ounce bag coleslaw mix
- 3 green onions chopped
- 3 ounce package chicken flavored ramen noodles crushed
- 1 green bell pepper chopped, seeds and insides removed
- 1/2 cup sliced almonds
- 2 tablespoons sesame seeds
- For the Salad Dressing:
- 1/3 cup vegetable oil
- 3 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 2 tablespoons white sugar
- 1/2 teaspoon black pepper
How to make Ramen Cabbage Salad:
1. In a dry skillet, toast the almonds and sesame seeds over medium high heat for a few minutes continually tossing until just golden brown and fragrant. Remove from heat.
2. Place ramen noodles in a gallon sized zippered plastic storage bag. Seal the bag and crush the noodles using a rolling pin.
3. Toss together the cabbage, green onions, chopped bell pepper, crushed ramen noodles, toasted almonds and sesame seeds in a large serving bowl.
4. In a small mixing bowl, whisk together oil, rice vinegar, soy sauce, sugar, and the chicken ramen flavoring packet. Pour dressing over cabbage mixture and toss evenly to coat. Serve immediately.

How to reduce the sodium in Ramen cabbage salad?
-If you’d like to reduce to sodium amount in the salad dressing, you can use less of the ramen flavor packet. Some choose to leave it out entirely, but we think it adds a lot of great flavor.
To use the ramen flavor packet or to not?
We use it. It adds the best flavor!
Do you use coleslaw mix, bagged shredded cabbage or whole heads of cabbage?
Which ever one you choose. It you need a kitchen shortcut, one of the pre-shredded bags are always a great way to cut down the prep time.

Variations of this recipe:
- Use heads of cabbage: both purple and green rather than the bag of coleslaw salad mix.
- Don’t use the ramen flavor packet at all and just season with sea salt and fresh black pepper.
- Make it a meal and add cooked chicken! Shredded rotisserie chicken is always so easy and delicious.
- Swap the rice vinegar for apple cider vinegar
- Add more color with shredded carrots, red and green bell peppers.
