Easy Mexican Rice
This recipe for Easy Mexican Rice is so delicious and easy it will be a staple for all of your Mexican dishes: from Burritos, to tacos and taquitos your family will ask for this side dish over and over again. Plus cooking it in your rice cooker makes it a great dish to take to potlucks. “Taco Tuesday” is a regular occurrence in our home, and with just 3 simple ingredients that you have in your pantry you can whip this up in a snap!
What if I don’t have an immersion blender?
If you don’t have an immersion blender that is not a problem. You can use a regular blender, a potato masher or even your hands which are the best kitchen tools anyways.
How do you make Mexican rice in a rice cooker?
This is the perfect side dish to allow you to set it, and forget it while you are preparing the rest of your meal. It couldn’t be any simpler, add all your ingredients into the rice cooker give it a quick stir. Set it to white rice and let steam until ready.
What you need to make easy Mexican Rice
- 1 1/2 cups white rice
- 2 cups chicken broth (or water)
- 1 can Mild Rotel
- salt to taste
How to make Mexican Rice
Blend one can of Mild Rotel. You can use regular Rotel if you like it more spicy, bu we prefer the Mild Rotel. Blend with a regular blender or an immersion blender.
Rinse the rice before adding it to the inner pot of your rice steamer, along with the chicken broth (or water). Add in the blended Rotel sauce. Give it a stir to combine. Close the lid. Set the rice steamer to white rice. Let it steam until ready.
When finished fluff the rice with a fork. Season with more salt (and pepper) to taste if desired. Serve warm.
