Get your chocolate quick fix with these frozen chocolate mousse cookies
This recipe is great for Summer. When you’re wanting something chocolate and cold, it’s the perfect little something to keep in your freezer.
Now there are a couple of different ways you could freeze them. You can freeze them in a silicone ice cube tray (for easy removal), or you can just spoon small balls onto a tinfoil lined cookie sheet – the easy way.
Once the are semi frozen, you can roll them in the graham crackers (work fast here so they don’t get too soft). Once they have the graham crackers on them, you just put them back in the freezer until you’re ready to eat.
Really simple and so good! You’ll have to give them a try!
Frozen Chocolate Mousse Cookies
We love this simple sweet treat made with just three ingredients!
Ingredients
- 1 16oz. tub cool whip
- 1 bag milk chocolate chips we love Guittard brand
- graham crackers crushed
Instructions
-
Let the cool whip sit out for a few hours to come to room temperature.
-
Microwave the chocolate chips in a glass bowl until just soft. Stir the chocolate chips until smooth.
-
Allow the chocolate to cool in the bowl for a few minutes.
-
Once cooled, combine the cool whip with the milk chocolate. Gently fold the cool whip in trying not to deflate the cool whip too much while you combine the two.
-
Spoon the chocolate mixture into roundish ice cube trays and semi-freeze.
-
Send the graham cracker crumbs through a strainer to separate the fine ground pieces.
-
Once semi frozen, roll the frozen chocolate balls in the fine crushed graham crackers.
-
Keep the cookies frozen in the freezer in a plastic tub or plastic bag and enjoy when you need a cold chocolate quick fix.
