Gluten Free Chicken Nuggets…homemade and delicious!
One of the benefits of being off of gluten and dairy, is that you cook a lot more than eat out. We are not currently off of gluten and dairy right now, but there are a bunch of beneficial things that came from that time for us. One is that we saved money! When you cook your own food, you have more control over the cost and the ingredients of the things you cook. Like most kids, my kids love chicken nuggets. I cringe when I think of how most chicken nuggets are made at fast food places, and they are most definitely not gluten free. Chicken nuggets are really easy to make at home, and with a swap in a few of the ingredients, they can easily become gluten free without losing any of the taste they know and love.
Here’s the recipe:
Gluten Free Chicken Nuggets
Ingredients
- boneless skinless chicken breasts
- almond flour/almond meal
- salt & pepper
- smoked paprika optional
- extra virgin olive oil or coconut oil
Instructions

Trim any excess fat and skin off the chicken, even though you might have bought skinless & boneless chicken breasts, sometimes things get missed and it's always a good idea to clean them up as much as possible.

Slice the chicken breasts into good sized nuggets or chicken strips.

Season the chicken with salt, pepper and smoked paprika (optional). Roll the uncooked chicken in the almond flour/almond meal until well coated. Gently shake off excess.

Now you can either pan sear them in the oil on medium high heat, browning them on both sides for about 6-8 minutes each (depending on thickness). Or you can bake them all for 30 minutes in the oven at 350. If you chose the oven method, cover your pan with tinfoil for easy clean up. Add the oil all over the baking pan, before baking.

Turn the nuggets over half way through the bake time.
