Fried rice is one of my favorite easy go to weeknight meals, perfect for using up leftover rice, leftover ham and veggies before they expire. Here’s a fun twist on classic Ham fried rice…Hawaiian Fried Rice with ham, pineapple and red bell pepper. If you love fried rice, you will also love this recipe for Chicken Fried Rice…perfect for using up leftover chicken.
Ham Fried Rice with Pineapple:
This Hawaiian Fried Rice is essentially just ham fried rice with pineapple. If you love grilled pineapple, you will love the addition of pineapple in this recipe. It’s the sweetness of the pineapple paired with the salty-ness addition of the soy sauce. The sweet and salty together is so good. I also love to add a little sriracha sauce at the end of just mine. It’s too spicy for my family, but I love it!
Ingredients:
- 2 cups ham chopped
- 1 small white onion diced
- 1 red bell pepper seeded and chopped
- 1 tablespoon vegetable oil
- 3 eggs lightly beaten
- 3 cups cooked rice
- 1 cup pineapple, fresh or from a can
- 1 tablespoon sesame oil
- 3 tablespoon soy sauce (add more if desired)
- 1 green onion diced
How to make Hawaiian Fried Rice:
-
- Preheat a large skillet or wok to medium heat. Add vegetable oil to grease the skillet. Add chopped ham, white onion, and red bell pepper and cook until tender.
- Slide the ham onion, and red bell pepper to the side, and pour the beaten eggs onto the other side. Using a spatula, cook and scramble the eggs. Once cooked, mix the eggs with the vegetable mix.
- Add the rice and pineapple to the skillet with everything. Pour the soy sauce and sesame oil on top. Stir and cook the rice and veggie mixture until heated through and mixed together. Finish with the diced green onions if desired.
Variations of this recipe:
This recipe is so easy and versatile, try these easy swaps to make it work:
- Spam for Ham:If you’d like you can swap ham out for spam. Spam is an island favorite and makes an easy substitute for Ham.
- Canned for Fresh: Fresh pineapple chunks if preferred in this recipe, but canned pineapple chunks, works great too.
- Powder for Fresh: If you don’t have fresh onion, you can add a little onion powder.
