This mushroom sauce is the perfect addition to any steak.
You need a delicious mushroom sauce to serve over that perfectly cooked prime rib. This sauce could be the main event, it’s so delicious, but technically it’s just a side dish to serve over prime rib or any kind of steak. It’s also delicious over mashed potatoes. It will take your special meal to the next level, for sure.
What you need to make this mushroom sauce for steak:
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1/2 cup yellow onion, diced
- 16 oz baby Bella mushrooms, sliced thick
- 1 garlic clove, minced
- 1/2 tablespoon fresh thyme leaves, minced (or 1/2 tsp dried thyme)
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/2 cup red wine vinegar
- 1 cup beef broth
- 1/2 cup heavy whipping cream
How to make this mushroom sauce for steak:
- In a large skillet set to medium-high heat. Add the butter and the olive oil. Add in the diced onion and cook until tender and translucent. Add in the sliced mushrooms and sauté with the onion, stirring frequently until the mushrooms are lightly browned.
- Add the minced garlic, thyme, salt and pepper. Stir together until the garlic is fragrant then transfer mushrooms, onions and garlic to a separate bowl.
- Add red wine vinegar and scrape the bottom of the skillet to deglaze the pan. Continue cooking to allow some of the red wine vinegar to evaporate. Add in the beef broth and simmer until reduced by half.
- Stir in the heavy cream and add the mushrooms back in. Bring it all to a simmer until the sauce reaches your desired thickness. Season the sauce to taste with more salt and pepper if needed. Serve over your favorite steak.
Variations:
- Change up the mushrooms: we are using baby Bella mushrooms, but you can use what ever kind of mushroom you like best.
- Add Cheese: if you love cheese, you can add cheese to this sauce. Asiago cheese or parmesan cheese would both be a great addition to this sauce. Just add a few tablespoons in at the end and it will melt nicely.
Tips and Tricks:
- Avoid over cooking the mushrooms…they tend to shrink a lot while cooking, and you don’t want to over do it.
- This sauce thickens up nicely, but if you need to help it thicken up more than it already does, you can add a little corn starch and water slurry to help it along if needed.
What to serve it on?
We love this mushroom sauce served over prime rib with mashed potatoes, but it would also be excellent over chicken or pork.
