One Bowl Banana Bread is just too easy to make when you have overripe bananas. This recipe is trouble…in the most delicious way!
We have a burger restaurant near us that serves a banana bread sundae with toasted coconut, vanilla ice cream with a chocolate drizzle, and it’s sooo good! After having it, I had to make it at home. Nothing beats warm homemade chocolate chip banana bread. I have these mini loaf pans that are the perfect size. They make great little loaves to wrap up and give as a gift.
Banana Bread Recipe for Overripe Bananas
We love to always have bananas out on the counter, it’s a great grab and go fruit for kids. Often times they start to turn brown before we can eat them up at their peak, but I’m never mad about an overripe banana, because it will either end up in a smoothie or as banana bread. Win win!
The best way to freeze bananas:
When freezing bananas, there are two ways we like to freeze bananas. If you are freezing bananas for smoothies and you want to know the exact measurement (say…one whole banana), then we like to peel the bananas, wrap them in plastic wrap and then place them into a gallon sized freezer bag. If you are freezing bananas with the intention to make banana bread, you can mashup the exact amount of bananas that this recipe calls for (3-4 bananas), freeze them mashed up all together in a freezer safe quart sized plastic storage bag. Either way you choose, frozen bananas are an awesome thing to have on hand in the freezer.
There’s so many different ways to mix up banana bread, we have made banana bread with chia seeds which is so good…it tastes like poppy seeds but chia seeds are loaded with protein, fiber and antioxidants. We’ve made banana bread with a cake mix, which is super easy. We love to mix it up with mini chocolate chips, but we never make it with nuts (just say no to nuts!)
One Bowl Banana Bread
No mixer required for this easy one bowl banana bread! We love to add mini semi sweet chocolate chips and serve it up with toasted coconut and vanilla ice cream for decadent dessert!
Ingredients
- 2 cups all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter (one stick) melted
- 3/4 cup sugar
- 2 large eggs
- 3-4 bananas mashed
- 1/4 cup sour cream
- 1/2 teaspoon vanilla extract
- 1/2 cup semi sweet mini chocolate chips *optional
Instructions

Preheat oven to 350F. Prepare baking pans with baking spray and parchment paper.

In a large mixing bowl, whisk together all the dry ingredients: flour, baking powder, baking soda and salt.

Mix in the sugar and melted butter.

Whisk in the eggs, mashed banana, sour cream and vanilla.

Mix all ingredients together until combined well.

Pour into prepared baking pans. Bake for 1 hour or until a wooden skewer comes out mostly clean of the wet batter after being inserted into the center of the bread.

Allow to cool in the baking pans for 30+ minutes with a clean hand towel over the top.

Enjoy warm! Keep covered in plastic wrap at room temp.
Recipe Notes
Bake times for different pan sizes:
-9x5inch loaf pan - 1 hour
-3x5inch mini loaf pan - 45 minutes
-cupcake pan - 25 minutes
*Baking with salted butter? Reduce the salt in the recipe to 1/4 teaspoon.
*No Sour Cream? Just add 1/2 more bananas!
