One ingredient ice cream…yep! You might be thinking: “That’s Bananas!” …and it is…it’s made with just bananas!
A few years ago, we were on a dairy free gluten free diet, and it was so hard at first! Once we got the hang of things, I was so thankful to learn of dairy free options for ice cream (one of our favorite things!). Fast forward two years and I still love to make this dairy free ice cream. This one ingredient ice cream is made with just bananas! It’s crazy how the texture when blended smooth really does taste like soft serve ice cream. You can also freeze it for a few hours and it becomes more like a hard ice cream you can scoop out. Top it off with this dairy free coconut caramel sauce and you’ll forget you’re eating healthy!
How to make One Ingredient Ice Cream:
- Slice: Slice the frozen bananas.
- Push bananas down: Using the end of a hard plastic spoon or a wooden spoon, push the bananas down into the blender.
- Blend: Start blending, stopping along the way to assist your blender with air pockets by moving the banana mixture down to the bottom of the blender. Blend until smooth.
- Enjoy or freeze: You can eat it as is in it’s soft serve consistency or freeze it for a few hours (with plastic wrap over the top) and scoop it out onto a cone or into a cup. Enjoy!

Keep this ice cream stored in the freezer in a closed container, or covered with plastic wrap. It makes the perfect healthy treat for when your sweet tooth kicks in!

Freezing bananas:
If you have ever added bananas to the freezer with the peel on, you know that it is almost impossible to get the banana peel off once frozen solid. Here’s our favorite way to freeze bananas. Make sure to peel your bananas before freezing. Cut the banana in half. Wrap them in plastic wrap and keep them in a ziplock bag, or any other closed container until ready to use. Another option for freezing bananas is to mash the bananas inside a quart sized plastic freezer bag and label the bag so you know how many bananas mashed together are in the one bag. This method is great for making banana bread and for making this banana ice cream.
Prevent overworking your blender:
Even with a trusty heavy duty blender like my Blendtec, when you are blending anything without any liquid, it is easy to overwork your blender. To not overheat or overwork your blender, slice the bananas small before blending and then use the end of a wooden spoon (or hard plastic spoon) to crush the frozen bananas in the blender. It’s important to plan on starting and stopping your blender often when there are air pockets. Once stopped you can assist in moving the bananas towards the bottom. This will really help your blender blend them up quicker with less start and stop times in between.

- coconut milk
- coconut sugar
- salt
- vanilla extract
How to make Dairy Free Caramel Sauce:
- Add ingredients to sauce pan: Place the coconut sugar, coconut milk and salt in a small sauce pan.
- Stir on medium heat: On medium high heat continue stirring mixture to help dissolve the sugar.
- Simmer: Bring the mixture to a simmer, and cook for 10 -15 minutes.
- Allow to thicken: The sauce will thicken more as it cools down.
- Add vanilla and serve: Finish it off by adding in the vanilla extract. Serve it warm.

- 1 cup coconut sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract

Recipe Notes
This sauce will keep in a jar in your fridge for a week+. The sauce may harden as it cools to room temp, you can warm small portions at a time in a microwave safe container.
