Cheesy Parsley Potatoes is one of our favorite potato side dishes. They are great for serving a crowd.
A few of you commented on the ham rolls from yesterday about the potatoes on the plate, asking for the recipe. So today is a follow up with the recipe for the potatoes (yay!). They’re called parsley potatoes, and they’re so good! They go great with so many meals. They’re a cheesy potato yet different than the standard funeral potatoes so many of you are familiar with.
How to Make Parsley Potatoes
-peel and slice the potatoes. We use a potato slicer like this one (see the picture below).
-Once all the potatoes are cut, you’ll season them
-add the cheese and sauce, and bake!
Parsley Potatoes
Parsley Potatoes are a delicious potato dish to feed a crowd. Loaded with cheese and seasoned with chopped parsley this potato dish is a family favorite.
Ingredients
- 6 medium potatoes peeled and cut into french fry shape
- 3 tablespoons butter cut into small pieces
- 1/2 cup fresh parsley, chopped or 1 tablespoon dry parsley
- 1 cup sharp cheddar cheese grated
- 1 cup heavy cream
- salt and pepper to taste
Instructions

Preheat oven to 425 degrees.

Peel and chop the potatoes into the shape of homemade french fries. Keep a large bowl of water near your cutting board to submerge the potatoes in the water while you are working.

Line a 9x13 baking dish with foil. Lightly spray the foil with non stick cooking spray. Layer the potatoes into a 9x13 pan in this order: potatoes, salt and pepper, butter, parsley and cheddar cheese. Pour the 1 cup heavy cream evenly over all.

Cover tightly with foil on the top and pinch the edges of foil together so the potatoes will steam and bake in the foil pouch. Bake at 425 degrees for 1 hour and 20 minutes. Serves 6-8.
