Russian Cream Recipe
The best desserts are easy, simple, creamy and delicious. My best friend in college made this when we were both newly weds and I still love this dessert to this day. Russian Cream… just hearing the name makes you think of something rich and creamy and this dessert is in fact just that: creamy, tangy, rich and simple. This dessert is the perfect end to a delicious meal. You can make it for any occasion and everyone always loves it.
What exactly is Russian Cream:
Russian cream is a dessert that is a mix between a custard and a pudding. It’s made similar to Panna cotta. Basically a gelatin cream dessert…the perfect berries and cream dessert. It just melts in your mouth with a smooth creamy texture with a simple vanilla flavor. Nothing crazy, just a delicious dessert.
What you need to make Russian Cream dessert:
- heavy whipping cream
- granulated sugar
- pinch of salt
- gelatin
- boiling water
- sour cream
- pure vanilla extract
How to make Russian Cream:
- In a medium sized saucepan, heat the cream, sugar and salt over medium heat until the sugar dissolves, stirring constantly for about 4-5 minutes. Keep the heat to a gentle simmer. Remove from the heat and set pan aside.
- Dissolve the gelatin completely in 1 cup boiling water and whisk it into the warm cream mixture. Let this mixture cool in the fridge for 30 minutes.
- Whisk in the sour cream and vanilla into the cooled cream mixture until smooth.
- Spoon mixture into individual serving dishes (about a cup per serving)
- Refrigerate for at least 4 hours and up to 24 hours
- When ready to serve top with fresh berries and serve chilled.
How to serve Russian Cream:
We opted to serve our Russian cream dessert in individual round dishes that hold about 1 cup servings but there are a number of way that this dessert can me served. You can use anything from champagne or wine glasses to pretty white or colored ramekins. You can also use jello molds in different designs and make one big dessert that you can be sliced and served on a plate.
You also can serve this dessert parfait style with layers of a fruit compote or any variation of berries you may want. Feel free to catered to the individual people who you’ll be serving. It really is the perfect blank canvas of desserts.
Can other flavors be used for this Russian Cream recipe:
Aside from changing the types of berries or compotes you serve with it, you can also get creative with the flavor of the actual Russian cream itself. Pure vanilla extract is always a classic, but you can also try a coconut flavored extract, orange extract or lemon extract. I do suggest trying it with vanilla extract first if it’s your first time trying this dessert, then go ahead and experiment with different flavors.
