Shredded Sweet Pork
We are crazy for Cafe Rio around here, they have the best Mexican food. We love it all…from the burritos, salads and enchiladas…it’s all so good. If you are not familiar with Cafe Rio where you live, it’s a Mexican restaurant here is Utah and some of the surrounding states. Two of our favorites are the shredded chicken and this recipe for the shredded sweet pork. It’s fun to make these favorites at home. Looking for your next buffet idea? CopyCat Cafe Rio Sweet Pork Recipe made in a Slow Cooker:
This sweet shredded pork is a big favorite at Cafe Rio. It’s tender, juicy, spicy and sweet. It really is so full of flavor.
Ingredients:
- 3-5 pounds pork roast
- 1 packet of Taco Seasonings or 2 tablespoons of Homemade Taco Seasoning
- 1 can of coke (1 can of root beer works too)
- 1 cup of brown sugar
- 1 cup green salsa
How to make Shredded Sweet Pork (CopyCat Cafe Rio):
- Cut the roast into large chunks of pork.
- Rub the dry seasoning all over the pork roast.
- Place the seasoned pork roast into the slow cooker.
- Add the full can of coke, brown sugar and green salsa. Stir to combine.
- Cook on low for 8-9 hours or on high for 5-6 hours.
- Move the cooked pork to a cutting board to shred.
- Add the cooked shredded pork back into the slow cooker to keep it moist with all the juices.
- Keep warm in the slow cooker until time to serve.

What kind of pork for Cafe Rio Sweet Pork?
For the pork, we often buy the 4 pack at Costco of pork sirloin roasts. Pork shoulder roast will work too, just trim off some of the excess fat.
Swap the can of coke for root beer:
If you wanting something without caffeine, a can of Root Beer also works in this recipe in the place of a can of coke. Both work great.
Trader Joes Green Salsa:
There are two green salsas at Trader Joes, and both work great for this recipe. If you have a green salsa that you love at your house, use what your family loves. Herdez brand is another favorite that we love for Green Salsa.
Store and Freeze:
This cooked and shredded sweet pork will keep in your fridge for 5-7 days.
It also freezes great too! Freeze for up to 2 months. We like to flash freeze it flat on a sheet pan lined with parchment paper and after 1-2 hours transfer chunks to a gallon size bag. This makes it easy to thaw smaller portions when you want it.

Ingredients

Make Cafe Rio Sweet Pork in a Pressure Cooker:
We love to make this with our slow cooker, but you can also make it in your pressure cooker:
- Add the can of coke (or root beer), brown sugar and the 1 cup green salsa to the inside pot of your pressure cooker. Stir to combine.
- Rub the taco seasoning all over the chunks of pork.
- Secure the lid, set the valve to the seal position. Cook on high pressure for 55-60 minutes. Let the pressure naturally release for 10 minutes and then quick release the remaining pressure.
