Spaghetti Squash is the star of this easy meal prep meal.
Meal prepping is something I’ve always wanted to get into. I know I won’t be 100 percent, so I’m not going to let it stress me out, but I think it’s such a great way to set yourself up for success, even if it’s just for one meal a day. Let’s say you have a habit of often going to the drive thru for lunch, but if you knew you had a quick and healthy lunch meal prepped and ready in your fridge just waiting for you to warm up, you can count that meal a success! Not only a success in that you’ve just made a better food choice, but you’ve also just saved your self some cash! Next time you make spaghetti for your family, make it with spaghetti squash and make a few extras for a healthy lunch option later in the week.
Have you ever cooked a spaghetti squash? It’s so easy! Probably the hardest part is cutting through it…the struggle is real on that one…yikes! Make sure you have a sharp knife and be careful. Once you have it cut in half lengthwise, just scrape out the seeds and strands holding the seeds in. Now you’re ready to bake them. Cover them with a little olive oil and lay them on a foil lined sheet pan cut side down.
Once baked and cool enough to handle you can now do the fun part…separate the spaghetti like strands from the outer shell.
You can eat it like spaghetti in the squash shell, just top it with spaghetti sauce and cheese if you’d like.
Spaghetti Squash Spaghetti Meal Prep
Ingredients
- 3 small spaghetti squash
- 1 pound ground turkey or lean ground beef
- 1 jar of your favorite spaghetti sauce
- grated cheese optional
- olive oil
- salt and pepper
Instructions

Preheat your oven to 375.

Carefully cut the spaghetti squash in half length wise. Scoop out all the seeds and middle strands.

Place squash cut side down on a foil covered sheet pan.

Gently rub a teaspoon amount of olive oil onto all sides of the squash.

Bake for 45 minutes or until the flesh easily separates into spaghetti like strands with a fork.

While the squash is baking in the oven, brown the ground turkey or ground beef. Remove any excess fat.

Add in your spaghetti squash and toss the meat with the sauce until warmed through and well combined.

Allow the squash to cool enough to handle.

Finish by gently separating the spaghetti strands with a fork from the outside shell.

Season with salt and pepper and add the meat spaghetti sauce onto each portion. Garnish with grated cheese if you desire, and enjoy!
