Stick of Butter Rice is one of our favorites!
This old recipe is one of our favorites. I love that I *almost* always have all the ingredients on hand to make it for dinner. It pairs perfectly with a rotisserie chicken and vegetables. Sometimes we will add some carrots in with the rice to cook with the rice, making dinner even easier. I usually cook rice in my rice cooker, but it’s nice to know I can cook rice in the oven too if needed, and the rice always comes out so good in this recipe.
Stick of Butter Rice
Stick of Butter Rice is a delicious side dish that pairs well with so many main dishes. It’s made with white rice, beef broth and onion soup.
Ingredients:
- 1 cup white rice , uncooked, rinsed
- 1 10oz. condensed French Onion Soup
- 1 10oz. condensed Beef Broth , (or 1 1/4 cups)
- 1/2 cup butter , sliced into slabs
How to make Stick of Butter Rice:
- Preheat oven to 400 degrees.
- In an 8×8 baking dish add the rice, onion soup, beef broth and top with the butter slabs, then stir well.
- Cover and bake for 30 minutes
- Remove the foil and bake for an additional 30 minutes.
Variations of Stick of Butter Rice:
One of the things I love about this easy recipe is how you really can make it work depending on what you have. One time I didn’t have the can of French Onion Soup, but I did have envelopes of Onion Soup Mix, and it still worked out. Here are some easy variations or swaps you can make to this recipe:
- Onion Soup: You can use 1 – 10oz. can of Condensed French Onion Soup OR one envelope of dry Onion Soup Mix
- Beef Broth: You can use 1 -10oz. can Condensed Beef Broth OR one 32oz. box beef stock OR you can make your own beef broth with Better than Bouillion.
- Rice: We always use white rice for this recipe, but you can use brown rice too. The only thing to avoid is using instant rice.
- Vegetables: Often times I will add in some peeled and sliced carrots to cook along with the rice. Sautéed mushrooms that have been cooked in butter would also be delicious.
Should you rinse rice?
It’s always a good idea to rinse rice. It often times has factory dust on it, and it’s good to rinse that off.
Can you make this recipe with half a stick of butter?
Yes! You totally can make this rice with just half a stick of butter. It just won’t be as buttery.
Freeze and Store:
You can freeze this rice in an airtight container or freezer safe bag for up to 3 months.
Rice Consommé
Some call this recipe: Rice Consommé because it cooks in beef and onion consommé.
