Crock Pot Sweet Pork at home…just like Cafe Rio!
Make a big batch of enchiladas with this sweet tender pork. So good! The best part is that you get to put your crock pot (slow cooker) to work for this tender juicy sweet pork. The flavor is amazing and the pork comes out so soft and tender. Wrapped up in an enchilada, it’s the perfect family dinner everyone will love.
Ingredients you’ll need to make Sweet Pork Enchiladas:
- CopyCat Cafe Rio Sweet Pork
- Cilantro Lime Rice
- Mexican blend cheese
- flour tortillas
- mild diced tomatoes with sweet green chiles
How to make Sweet Pork Enchiladas:
- For the enchilada sauce blend one can of: diced tomatoes with sweet chilies (like Rotel). We like the mild Rotel. Spread a layer of the sauce on the bottom of the baking dish.
- Using your tortilla of choice, add big spoonful’s of the cilantro lime rice, the shredded sweet pork and grated cheese. Roll each tortilla up and continue on with the next enchilada until you fill the baking dish.
- Top all the rolled up enchiladas with more of the red sauce and more grated cheese.
- Bake at 350 for 30 minutes until hot and bubbly and the cheese is melted.
- Serve with fresh tomatoes, lettuce and sour cream.
How to store Sweet Pork Enchiladas:
Store your prepared enchiladas in the fridge for up to 5 days. You can just keep them in the pan they were baked in, or transfer to an airtight container. These enchiladas make amazing leftovers!

Sweet Pork Enchiladas with green sauce or red sauce:
You can make these enchiladas with either red sauce or green sauce. For the red sauce you can use store bought or follow the recipe below. For the green enchilada sauce, you can make this homemade green enchilada sauce or we for a store bought version, we love the Las Palmas brand. If you can’t decide between a red sauce or a green sauce, you can make these enchiladas with both! See these red and green enchiladas!

A can of Mild Rotel to make Enchilada Sauce:
For an easy red enchilada sauce you can blend your favorite salsa. It’s always a great option if you don’t have quick access to enchilada sauce. For this sauce we used a large can of Rotel to make this easy sauce. We prefer the mild option of Rotel.
Variations:
There’s so many different ways to make enchiladas. There’s a lot of different things to add to the inside of the enchiladas.
- add cheese: even though there is cheese on top of these enchiladas, you can add cheese to the inside.
- swap the sweet pork for shredded chicken
- try Mexican rice rather than cilantro lime rice.
