Shrimp Pasta Salad
This easy shrimp pasta salad is so simple to make, it’s a family favorite recipe we all love. It’s a great side dish at a Summer BBQ, but you can make it year round.
What you need to make Shrimp Pasta Salad:
- 1 small package mini alphabet macaroni
- 4 hard-boiled eggs chopped small
- 2 cans shrimp rinsed and drained
- 3 green onions diced fine
- ¼ cup green bell pepper finely diced
- mayonnaise -added in desired consistency
- salt and pepper
- smoked paprika
How to make Shrimp Pasta Salad:
-Following the directions on the package of the mini alphabet macaroni, bring the water to a boil in a medium-large pot. Add 1 tsp. salt to the water and add the macaroni. Cook until tender, just a little al dente (about 10-12 minutes). Drain excess water.
-Stir together the cooked and cooled alphabet pasta, shrimp, diced veggies and hard boiled eggs.
-Add mayonnaise to your liking. Season with salt and pepper. Stir it all together. Move to the serving bowl and sprinkle lightly with paprika. Keep chilled until ready to serve.
Where to find mini alphabet pasta letters:
Alphabet pasta can be hard to find. It had been a while since I had made this recipe and I went from store to store looking for it and most of the stores did not have it. I eventually found it at one of the Mexican specialty stores! Where I live: The Rancho Markets does carry it. It’s really inexpensive, and it makes a great pantry item to always keep on hand, so stock up.
