Christmas Tree Veggie Skewers
Here’s a healthy and festive snack for Christmas. Little Veggie Skewer Trees or Christmas Veggie Skewers. We are always on the look for healthier snack options during the holiday season. What you need to make Christmas Veggie Skewers:
- Cucumbers
- Cherry or Grape Tomatoes
- Cheese (Pepper Jack, Monterrey Jack or Swiss)
- wooden skewers (medium length)
How to make Christmas Veggie Skewers:
- Use a knife or a mandolin to slice the cucumber in long thin strips.
- Cut the cherry tomatoes in half length wise to use as the base to hold the trees up vertically.
- Use a tiny star shaped cookie cutter or a knife to make tiny little star shaped cheese stars.
- Assemble: Add the cucumber onto the skewer in a back and forth wavy sort of way. Add the tomato half to the bottom of the skewer and then the cheese star to the top.
- Repeat until you have made as many Christmas Veggie Skewer trees as you would like. Enjoy!
Helpful tools needed:
- handheld mandolin
- tiny star shaped cookie cutter
- medium sized wood skewers
What if I don’t have the tools needed?
You can use a vegetable peeler if you don’t have a mandolin. Use the vegetable peeler to make long flexible strips of cucumber.
If you don’t have a star cookie cutter, no problem, just use a sharp knife to cute the cheese into star shapes.
If you can’t find medium sized wooden skewers, you can always use scissors to cut a long wooden skewer into a shorter length.
What to serve these veggie trees with?
These would be a great addition to a veggie platter with our favorite veggie dip. You could serve it along with carrot sticks, crackers and fruit. Some of our other favorite vegetables:

-cauliflower florets
-zucchini strips
-broccoli florets
-radishes, quartered
-mini bell peppers

Can I make these veggie trees ahead?
Sure! You can make them ahead. You can cut the cheese into star shapes and make the cucumber strips the night before and keep them covered in plastic wrap separately in the fridge. I would hold off on assembly until an hour or so before serving so that the things don’t dry out.
