Delicious marmalade muffins…just like the favorite of Paddington Bear.
We love a good muffin, especially when they have sour cream in the mix, they always come out so moist and soft. Top them with a simple orange marmalade (or your favorite flavor), and they will be eaten up in no time.
What you need to make Marmalade Muffins:
- sour cream
- sugar
- eggs
- vanilla
- almond extract
- canola oil
- all purpose flour
- baking powder
- salt
For the Glaze:
- orange marmalade
- water
How to make Marmalade Muffins:
- Preheat: Preheat oven to 350°F.
- Prepare muffin pan: Line a muffin pan with paper muffin cup liners.
- Mix wet ingredients: In a medium-sized bowl, mix together eggs, sour cream, sugar, almond extract, vanilla extract and oil. You can use a hand mixer, or mix by hand with a whisk.
- Combine dry ingredients and add to wet ingredients: Sift together the flour, baking powder and salt. Add dry ingredients to wet ingredients, and stir until well combined.
- Add to pan: Spoon the batter equally into the muffin cups.
- Bake: Bake for 18-20 minutes until lightly golden brown and an inserted toothpick comes out clean. Allow to cool 5 minutes.
- Make the glaze: For the glaze, combine marmalade and water in a microwave-safe bowl. Heat for 15 seconds, if you hear it bubble in the microwave before 15 seconds, it’s ready. Stir well to make the glaze.
- Top and serve: Brush the warm muffins with the marmalade glaze and serve.
How to store Marmalade Muffins:
Keep these muffins stored in an airtight container at room temperature for up to five days. You could also keep them stored in the fridge or freeze them to last longer.
Paddington Marmalade Muffins:
We just had to make Marmalade Muffins for Paddington. I love how they all say “Mah-malade” (marmalade) in the movie. Hot out of the oven we brushed a marmalade glaze on the top of each muffin, definitely Paddington approved.
