Mini Cheese Quesadillas are the perfect feed a crowd party food!
We love those little flour tortillas for street tacos made by Mission, but did you know they are perfect for mini cheese quesadillas?! They make a great addition to your party food table. Make a big batch of mini green chile and cheese quesadillas, the best part is that you can make them ahead of time and warm them up just before guests arrive.
What you need to make a big batch of mini cheese quesadillas:
-2 packages Street Taco flour tortillas
-4 cups grated cheddar cheese (or Mexican blend cheese)
-1 jar Salsa Verde (we like Trader Joes or La Victoria)
-1 stick butter
-1/2 teaspoon sea salt
How to easily make a big batch of Oven Baked Mini Cheese Quesadillas:
-Preheat your oven to 425.
-In a large bowl combine the grated cheese with 1/4-1/2 jar of the salsa verde (more or less depending on your preference).
-Cover two sheet pans with tinfoil.
-Grease the foil with the stick of butter. Sprinkle the sea salt onto the buttered foil.
-Each mini flour tortilla has a plain side and a side with grill type marks. Rub butter on the grilled looking side and place that side down onto the sheet pan. You should be able to fit 6 small tortillas onto each sheet pan. Repeat this step until you have the first 12 tortillas buttered side down ready to assemble.
-Place a little more than a tablespoon of the cheese salsa mixture onto the center of each flour tortilla.
-Bake for 5 minutes or until the cheese is melted.
-Take the pan out of the oven and gently fold each little quesadilla in half, gently pressing the sides together.
-Gently move the foil with the quesadillas off of the sheet pan so you can line each one with more foil and repeat with the second batch of 12 tortillas.
Serve warm.
Tips and Tricks for making these Mini Quesadillas:
-Make a day head! Allow them to cool and then refrigerate until planning to serve.
-To Reheat, place all quesadillas on a foil lined sheet pan in a single layer and bake at 350F for 5 minutes.
-These mini street taco tortillas have a grilled looking side and a non grilled side, be sure to bake them with the grilled side out.
-Serve More! You can cut each mini quesadilla in half to make 48 quesadilla triangles.
