Sweet Chex Mix is so a addicting and a favorite Christmas treat!
For years my sweet mother in law always makes her delicious sweet Chex Mix. We all love it! It’s both sweet and salty and oh so addicting! It’s one of our favorite treats over the holidays. It’s simple to make and we love to mix up a double batch to keep some to enjoy and more to give to friends and neighbors. It’s a holiday favorite around here for sure!
Ingredients:
- 3 cups Rice Chex cereal
- 3 cups Corn Chex cereal
- 3 cups Golden Grahams cereal
- 2 cups pretzel twists
- 1 1/2 cup cashews, salted and roasted
- 1 1/2 cup sweetened, shredded coconut
- 1 cup granulated sugar
- 1 cup light-corn syrup
- 1 cup salted butter
- 1 tsp vanilla extract
- A few pinches of finely crushed sea salt
How to make Sweet Holiday Chex Mix:
- In a large mixing bowl, toss together Rice Chex, Corn Chex, Golden Grahams cereal, cashews, pretzels and coconut, then set it aside.
- In a medium saucepan combine: sugar, light-corn syrup and butter. Bring mixture to a rolling boil over medium-high heat, stirring occasionally.
- Allow mixture to boil for 2-3 minutes, stirring occasionally.
- Remove from heat, stir in the vanilla and carefully pour sugar mixture over the cereal mixture and toss to evenly coat.
- Move the coated cereal mixture to two sheet pans lined with parchment paper to cool and set.
- While the mixture is still warm sprinkle a few pinches of fine sea salt over the top. Once cooled, store in an airtight container at room temperature.
How to Store:
Store this sweet treat at room temp in air tight container. It can be left uncovered while hosting parties for friends and family to nibble on through out the night. It also makes great neighbors gifts. We love to double this recipe so we have some to enjoy and a bunch to gift to friends and neighbors. Just wrap it up in a cute cellophane bag with a ribbon and everyone will love it!
Optional Add ins and Variations:
- if you have other favorite cereals, you can add them in if desired.
- Love Mixed nuts? If you have a favorite nut or if you love all of them, add them in. We think cashews are the best in this mix, but feel free to use mixed nuts if you love them all.
- Don’t love coconut? Leave it out! We love the addition of the shredded coconut, but it can easily be left out.
How many cups of cereal in a box of cereal?
There are 11 cups of cereal in a 12ounce box of cereal, so you can easily double this recipe…and you should! If you are making it, you might as well make a big batch.
What size of pretzel bag to buy for sweet Chex Mix?
You don’t need a huge bag of pretzels. A 16oz. bag of pretzels will be great for this recipe. We prefer the pretzel twists (aka pretzel knots) in this recipe, but pretzel sticks will work great too.
Tips and Tricks for recipe success:
- Really let the butter sugar mixture come to a rolling boil. Once it is boiling, let it boil for a solid 2-3 minutes…watching it to make sure it does not boil over.
- Use salted butter for this recipe. The salt is needed to combat the sweetness.
- want it less gooey – add 1 more cup of each kind of cereal.
- once it’s all mixed together, it helps to move it onto two or more sheet pans lined with parchment paper. This way any excess coating doesn’t all pool to one spot in the bottom of the bowl.
Tools needed for this recipe:
- Large stainless steel bowl (mine is 16 inches in diameter) – a large bowl helps to easily mix a double batch.
- Medium- large sized sauce pan or larger – you do not want the butter sugar mixture to boil over. A big saucepan is helpful to keep the sauce contained.
